- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 pounds red potatoes cut into 1 1/2-inch chunks
- 1 pinch salt
- 1 pinch black pepper optional, omit for a gluten free dish
- 1 pound asparagus trimmed and cut into 2-inch pieces

- Preheat your oven to 350 F. In a glass measuring cup, blend the olive oil and garlic and microwave for 20 seconds; set aside.
- On a baking sheet lined with parchment paper, arrange the potatoes and drizzle with the olive oil and garlic. Sprinkle with the pinches of salt and pepper. Toss the potatoes to coat. Bake for 25 minutes.
- While the potatoes are baking, trim and cut the asparagus.
- Remove the potatoes from the oven and add the asparagus pieces to the pan, tossing carefully with tongs to coat with the oil, garlic, salt and pepper.
- Bake an additional 15 to 20 minutes or until the asparagus and potatoes are soft enough to pierce with a fork and the potatoes are beginning to brown on the edges. Serve warm.
