Chickpea Spinach Gigli Pasta with Za’atar
An easy nutritious recipe using delicious flavor combinations. Use beautiful gigli pasta for a perfect presentation. Sprinkle each bowl with za’atar and olive oil drizzle.

  1. Heat olive oil in a large skillet on medium high heat. Add the chopped onion, garlic, cumin, thyme, and lemon zest. Add 1/2 teaspoons of salt and a pinch of black pepper. Cook for 3 to 4 minutes, stirring, until the onions are soft and golden. Reduce heat as necessary while sautéing.
  2. After heat is reduced to low, add the chickpeas and brown sugar to the skillet. Cook for 8 minutes, stirring.
  3. In a soup pot or dutch oven, bring enough water (salted, if desired) to boil to cook the gigli pasta. Add the pasta and cook for 8 minutes or as directed on the package. Drain and rinse the pasta and set aside.
  4. Add the vegetable stock and lemon juice to the skillet of chickpeas, stirring to blend. Simmer for 6 minutes, until the sauce is reduced slightly. Remove the skillet from the hot burner.
  5. Stir the fresh spinach leaves into the warm chickpea skillet to wilt it. Add the drained pasta to the skillet.
  6. Divide the chickpea pasta between four serving dishes. Sprinkle with za’atar and a drizzle of olive oil, if desired. Serve hot.
