This winter, use chai latte spice mix to make a warm, satisfying drink you’ll want every night. Add a little bit of richness to a hot chai tea with the addition of almond milk or coconut milk and maple syrup.
You can adjust the amount of chai spice mix, plant based milk and maple syrup for a perfect balance. This is a snuggle-up-on-the-couch-with-a-throw kind of winter drink!
I love having this spice mix on hand for cold nights or if a friend drops by. Double or triple the spice mix to make a great Christmas, holiday, or hostess gift. Just add a cute tag and label!
You’ll find when you make this drink that a lot of the spices remain undissolved. That’s normal, so don’t worry about it. Many of the spices will stick to the bottom of the saucepan as you boil the water and tea, too.
I always remove the paper tag from the tea bag, along with the string. I just snip the string with scissors right above the tea bag, so I can toss the whole bag into the boiling water. Since the burner is on under the pan, it’s best to remove the chance of the tag overheating and catching fire. Safety first! Some people just throw the paper tag into the water with the tea bag. You do you, just don’t leave that tag hanging down onto the burner.
For adding the maple syrup to this drink: I recommend adding one tablespoon (per serving) to the simmering water first. Once you have made the drink, then you or each of your guests can add an additional tablespoon (or a couple of teaspoons) of maple syrup, to taste. It’s better not to overdo the sweetness.

- 1 tablespoon cinnamon
- 2-1/2 teaspoons cardamom
- 1-1/2 teaspoons ground ginger
- 1 teaspoon allspice
- 1 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1 cup water
- 1 teabag black tea or loose black tea for one serving, in an infuser
- 1 tablespoon chai spice mix
- 2 tablespoons maple syrup or to taste
- 1/2 to 3/4 cup plant based milk (depending on mug size) almond milk or coconut milk for the best flavor

- In a small mixing bowl, add all of the spice mix ingredients. Use a whisk to stir until well blended. Store in an airtight container.
- In a small saucepan, add 1 cup of water and 1 tablespoon of the chai spice mix. Bring to a boil then reduce to simmer, stirring often to dissolve the spices. Simmer 1 to 2 minutes.
- Place the tea bag into the pan of boiling spices and continue simmering for another 1 to 2 minutes. Using a spoon, carefully remove the tea bag from the water.
- Stir in 1 to 2 tablespoons of maple syrup, or to taste. More maple syrup can be added to the cup of hot latte.
- Barely warm 1/2 to 3/4 cup of almond or coconut milk by heating in a saucepan on low heat on the stove, then pour the milk into a mug. Or add the cold milk to a mug and microwave about 20 seconds.
- Pour the spice tea mix from the saucepan into the mug over the warmed almond or coconut milk. Stir to blend. Add any maple syrup to taste.
- Top with cinnamon or coconut whipped cream. For a nice touch, serve a cinnamon stick to guests for stirring.
