3 Simple Grilled Fruits
These 3 simple grilled fruits are a super fun addition to any cookout! You can prepare them ahead and have them ready to go on the grill with your meal or as a fresh summer dessert.

For the grilled pineapple:
For the grilled peaches:
For the grilled strawberries:
To grill the pineapple:
  1. Heat your grill on High. Put each slice of pineapple on a bamboo or metal skewer. (I use 12-inch bamboo skewers.)
  2. Melt the vegan butter and brush each slice of the skewered pineapple with vegan butter on one side only.
  3. Sprinkle the buttered side of the pineapple with brown sugar and then sprinkle with cinnamon.
  4. Place the skewered pineapple onto the hot griddle, sugared side down, and let it cook for 5 to 7 minutes, until it reaches desired brownness.
  5. Brush each upper side of pineapple slice with the melted vegan butter, then sprinkle with brown sugar and cinnamon. Carefully use a fork and the skewer to flip each piece of pineapple over. Cook another 5 to 7 minutes, until brown.
  6. Remove to a platter for serving.
To grill the peaches:
  1. Slice each peach in half and remove the pit.
  2. Brush the bottom and sides of the peaches with melted vegan butter, then brush with maple syrup.
  3. Place on the grill, bottoms down. Cook 5 to 6 minutes or until browned.
  4. Brush the tops with melted vegan butter and maple syrup. Carefully turn the peaches for the tops to grill. Cook another 5 to 6 minutes until browned.
  5. Remove to a platter for serving.
To grill the strawberries:
  1. Place the cut, washed and dried strawberries into a small bowl with just enough balsamic vinegar to cover half the strawberries. Let set for 7 minutes, then rotate the strawberries so the other halves are in the balsamic vinegar and let set another 7 minutes.
  2. Remove the strawberries to a small plate and sprinkle with brown sugar, tossing to coat evenly.
  3. Thread the strawberries onto skewers and place on the hot grill. Cook for 4 to 5 minutes or until the strawberries are soft and starting to brown.
  4. Rotate the strawberries carefully, and cook another 4 to 5 minutes or until starting to brown.
  5. Remove to a platter for serving.
  6. All of the grilled fruits would be so good topped with vanilla vegan ice cream!
