We're in Ellicott City for a few days, so we stopped into UMI Sushi for lunch today. I found them on the @happycow app.
All of the sushi looks green - asparagus, cucumber & avocado, and "mixed veggies." The little green dot on my plate is where the wasabi was that was *so hot* I gave it to hubs, who loves wasabi but called this one "super wasabi." 😊 The ginger was perfection.
We loved this restaurant and we'll definitely go back. It's a perfect place for lunch!
I'm off to find a recipe for their salad dressing, which tastes like oranges, carrots, vinegar and sugar. Yum!

I am in love with @runamokmaple Strawberry Rose Infused Organic Maple Syrup! I spent the week making peach galettes (posting soon) and these fab stuffed dates, both with strawberry rose infused maple syrup.
The recipe is easy, but oh-so-good. Perfect for Mother's Day and Father's Day. Heck, you'll want to make these year round! Vegans and non-vegans alike will enjoy these.
Dates with Strawberry Rose Maple Cashew Cream 💮
12 medjool dates
1 c. raw organic cashews
4 - 5 T. Runamok Strawberry Rose Infused Organic Maple Syrup
3 T. water
Vegan chocolate bar or
vegan chocolate chips
Soak the cashews covered in water for 3 hours. You want them to soften enough to blend into a creamy sauce.
To prepare the dates, slice down the middle lengthwise just to the pit. Open each date; remove the pit.
For the filling, in a food processor or high speed blender, blend the drained cashews, 4 T. of Runamok Strawberry Rose Infused Organic maple syrup (to taste, add 1 more tablespoon if necessary), and 3 T. of water. Stop blending to scrape the sides when necessary. You want the cream to be as smooth as possible.
Refrigerate for at least 30 minutes. (I left mine overnight. The consistency wasn't altered in any way.)
Use a piping bag to fill the dates with the Strawberry Rose Infused cream. Using a chocolate bar and a spice grater, top each date with chocolate powder. You can also melt vegan chocolate chips in the microwave and lightly drizzle over the dates.
I have gone nuts with this syrup. The strawberry and rose are perfectly infused to give the most delightful flavor!

I'm working on some recipes for @runamokmaple today, so *natch* when I made my iced coffee I had to sweeten it with Ginger Root Infused Runamok Maple.
The ginger undertones add a richness to the coffee, but are mild enough not to overpower the coffee flavor. So good and ORGANIC.
The other infused syrup flavors shall remain hidden behind my glass for now 👀, but I'm excited about using them in two yummy desserts - coming up! 🌸🌼

I'm thinking about Mother's Day brunch and this fresh salad comes to mind: cucumber salad or gurkensalat with sweet vinaigrette. 🙂 A perfect starter!
This delicious plate of freshness is made with very thinly sliced onions, fresh dill, and cracked black pepper, tossed with spiraled cucumber. Or you can carefully slice the cucumber thinly lengthwise using a sharp knife. Toss the ingredients (using a utensil, dill will stick to your hands) with this simple dressing and refrigerate for 1 hour before serving.
Sweet Vinaigrette
4 T. white wine vinegar
4 T. olive oil
1 T. sugar
1 t. salt
Shake all ingredients in a jar. Let set for a moment, then shake well before tossing into the salad.

Our Easter meal: simple broccoli & cauli with toasted almonds, charred corn salad, and roasted potatoes & onions with garlic & herbs.
We served strawberry short cake for dessert and made cinnamon roll bunnies for the kids.
