These delightful wafer cookie chocolate bars couldn’t possibly be any easier to make! And using vegan chocolate at home lets you make a nice vegan treat that you can eat guilt free!
These crispy candy bars are made with old-fashioned wafer cookies you can pick up in any grocery store. The cookies are the kind that have cream between the layers and are like a particular “snapable” chocolate bar but without the chocolate coating. You’ll take care of the chocolate part in your kitchen!
Wafer cookies are typically accidentally vegan, but be sure to check the ingredients listed on the package to be sure.
Just melt vegan chocolate chips, dip the cookies into the chocolate and arrange them on a sheet you can place in the freezer. Within minutes, you and the kids (or whoever eats the snacks at your house) will be in chocolate cookie crisp heaven! You can also add crushed roasted nuts or colorful sprinkles to the tops of these before freezing, for special occasions and holidays. The chocolate in my candy bars started to dry out a little bit after a couple of days, so I recommend serving these to guests or giving these as gifts on the day you make them or the day after. The oil content in the chocolate must be low, which is good, so you have to work around that. If you are just keeping them at home for yourself, I wouldn’t worry about the chocolate drying out and changing color slightly, the candy bars still taste scrumptious.

- 1 package vanilla wafer cookies can also use chocolate or other flavors
- 1 10-ounce package vegan chocolate chips
Ingredients

- Line a cutting board or small flat baking sheet with wax paper. Check to make sure this pan or board fits into your freezer.
- In a medium mixing bowl, melt the vegan chocolate chips in the microwave for 30 seconds. Continue melting the chips at 15 second intervals, stirring after each time, until the chips are melted. Stir to smooth.
- Separate the cookies from their package, dusting them off and placing them on a clean surface so that the chocolate will have a good surface to coat.
- Using your hands, dip each cookie into the chocolate. If the chocolate is too heavily coating, use your fingers to wipe the chocolate off the back and sides.
- Place each chocolate covered cookie onto the wax paper lined board or cooking sheet.
- After the cookies are all on the wax lined board, place them into the freezer for up to 5 minutes. (Can be left in the freezer longer if necessary.)
- Serve immediately or store on the counter, in the fridge or in the freezer until ready to eat. Add nuts or sprinkles to the tops before freezing, for special occasions and holidays.
