Roasted Potatoes Forestière
An easy but delicious, full flavored and aromatic roasted vegetable dish, perfect for any dinner.

  1. Preheat the oven to 350° F and generously oil a 9 x 13 casserole dish, or any dish in which you can spread the potatoes and mushrooms no more than 1-1/2 inches deep.
  2. Thinly slice the cleaned mushrooms and the potatoes (peeled or unpeeled).
  3. In a large bowl, toss the sliced mushrooms, potatoes, garlic and basil, along with salt and pepper to taste.
  4. Spread the potato mixture in the baking dish in an even layer.
  5. Bake 45 to 50 minutes, or until the potatoes are tender, turning over halfway through.
  6. Let cool a couple of minutes before serving. The dish can be garnished with whole fresh basil leaves.
