Red, White & Blue Fruit Salad

red white blue fruit saladWhile summer is coming to a close, and many fruit seasons wind down, it’s nice to have a good juicy fruit salad. This salad has a wide range of flavor: watermelon and dragon fruit juiciness combined with blueberries and strawberries. The citrus-y dressing adds the sweetness of agave, with the delicious tartness of limes and oranges.

This recipe is great for a variety of summer holidays, picnics, potlucks, and cookouts. If you are making the fruit salad for guests or a gathering, keep the dressing separate from the fruit and add it just before serving. This will keep the fruit pieces crispy and help them hold their shapes.

If you don’t have a melon baller to make melon and dragon fruit balls, you can use a stainless steel measuring spoon the same way. I use a teaspoon or tablespoon, depending on how large I want the fruit balls.

Keep leftover fruit salad in the refrigerator and eat it within two or three days.

Instructions
To make the fruit salad:
  1. Add all of the fruit and the poppy seeds to a large serving bowl. Toss to combine.
  2. Refrigerate until ready to use. For the freshest salad, keep the fruit and dressing separate until right before serving.
  3. Leftover fruit salad will keep 2 to 3 days in the refrigerator, but will eventually begin to get mushy due to the acids in the dressing.
To make the dressing:
  1. Combine all of the ingredients in a glass jar or small pitcher glass pitcher (like a vinegar bottle).
  2. Shake or stir to combine well. Be sure to give the dressing a stir before adding it to the salad, if you make the dressing ahead.
  3. Refrigerate until used.
