  1. Whisk brown sugar and melted coconut oil in a medium or large mixing bowl. Once blended, add the peanut butter and combine well.
  2. Add flour and mix again until combined.
  3. Pour in the plant based milk and cinnamon (optional) and mix again. The dough will be thick like cookie dough.
  4. Fold in the vegan chocolate chips.
  5. Scrape the dough into the prepared pan and push it down with your hands or a spatula until it covers the bottom evenly.
  6. Bake for 25 minutes or until the top and sides are beginning to get light brown and the center is just beginning to set. The blondies will firm up as they cool.
  7. Cool completely before cutting to minimize crumbling. Serve the blondies immediately or they can be refrigerated to serve later.
