Vegan Peach Crisp Ice Cream
A rich vegan peach ice cream topped with crisped sweet oats. A perfect summer recipe!

For the ice cream:

To make the ice cream:
  1. After peeling and dicing your fresh peaches, set aside one half of them (about 1 cup).
  2. Put 1/2 of the peaches, and all of the rest of the ingredients into a medium to large mixing bowl. Stir gently with a spoon to blend well, and taste to adjust sweetness.
  3. Pour the bowl contents into a blender or food processor and blend until smooth.
  4. Add the blended ice cream mix, along with the second 1/2 of the peaches, to your ice cream maker and freeze the ice cream according to the manufacturer’s directions, about 25 to 30 minutes (or more if needed). In the meantime, prepare the crisp topping.
  5. If the ice cream is still soft serve after freezing in the ice cream maker, put it in the freezer in a covered container for 20 to 30 minutes, or until it’s hard enough to scoop.
  6. Top with baked crisp topping or roasted sliced almonds. Serve immediately!
For the crisp topping:
  1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
  2. In a small mixing bowl, mix all ingredients until the oats are well coated.
  3. Spread the topping evenly on the lined baking sheet and bake for 20 minutes, stirring halfway through. Let cool. Sprinkle over the top of your delicious peach ice cream!
