Lisa’s Colcannon with Brussels Sprouts
The most delicious traditional Irish mashed potato recipe you’ll make, with added greens for a boost in nutrition.

  1. In salted water, boil the diced potatoes, cooking until soft enough to mash. Drain in a colander.
  2. In a skillet, melt the vegan butter. Immediately add the sliced and shredded Brussels sprouts, along with two of the sliced green onions. Saute until the vegetables soften.
  3. Add the milk to the skillet and simmer on low to medium heat, stirring constantly, until the greens are completely tender. Remove from heat.
  4. Place the cooked potatoes into a large mixing bowl. Mash them with a potato masher to the desired consistency.
  5. Add the sauteed greens and milk mixture to the mashed potatoes. Stir thoroughly to blend. If you want a creamier colcannon, at this point you can use an immersion blender or a counter top blender to blend 1/3 of the mixture until smooth.
  6. Add salt and pepper to taste, serve immediately or refrigerate until ready to serve. Reheat on the stove top or in the microwave before serving. Garnish with chopped green onions and slivers of Brussels sprouts.
