Garlic Vegan Parmesan Roasted Potatoes
Sliced sweet potatoes, Yukon gold potatoes, and yellow onions are topped with herbs and garlic and roasted to perfection. You’ll love having these potatoes with dinner.

  1. Preheat oven to 425° F. Oil the bottom and sides of a 9×9 inch casserole dish.
  2. Rinse and cut the potatoes and onion.
  3. Line up the vegetables into rows in the oiled casserole dish, alternating as you go.
  4. In a small bowl, mix the melted vegan butter, olive oil, thyme, oregano and basil, vegan parmesan and garlic. Spread generously over the tops of the vegetables using a spoon. Spoon any extra topping between the vegetable slices. Salt and pepper to taste.
  5. Bake for 1 hour or until a fork pierces the vegetables and they are a slightly brown on the tops and edges.
  6. Serve hot with additional sprinkles of vegan parmesan, if desired. Will keep in the refrigerator, covered, for 3 to 4 days.
