This is a quick throw-together recipe for an easy pico de gallo. The recipe makes a nice amount for two to four people as a chip or veggie dip. Use it as a flavorful topping for sandwiches or veggie burgers . It works well as a topping on your favorite Mexican dishes, too.

- 1 cup tomatoes seeded & cut into 1/2-inch cubes
- 1/4 yellow onion chopped
- 2 tablespoons fresh cilantro stems removed, chopped
- 1/2 fresh jalapeno finely chopped
- 1 clove garlic minced
- 1 splash lime juice
- salt to taste
